As the market for plant-based milk alternatives continues to grow, scientists at Plant & Food Research have been working on a range of plant-based milk alternatives using soybeans, oats, barley and quinoa. Developing new products requires understanding what’s in the raw material as well as what the consumer is looking for. Using oats and barley, the scientists have developed processes that deliver an adequate amount of beta glucan to meet the reduced cholesterol health claim in New Zealand.
